No-Bake Date Energy Bites

Ingredients

1/2 cup raw pecans

1/2 cup unsweetened shredded coconut

1/8 cup almond butter

4 - 5 pitted medijool dates

(optional - 1/2 tsp cacao powder or 2 tbsp cacao nibs)

Instructions

Put all ingredients in a food processor and blend until coarse (not chunky). Using a spoon, scoop the batter into the palm of your hand and roll to form balls, about 1 - 1.5 inches in diameter. Serve and enjoy!

Store in an airtight container at room temperature for up to 5 days.

Makes 8 - 12 single servings.
